Sugar On Snow
Sugar on Snow is maple syrup brought up to a boiling 235° and then drizzled over packed snow, where it seizes up into a chewy, caramel-like candy. You can roll it up onto a popsicle stick or just pick it up with your fingers and eat as is. This is a delicious treat that is fun to make with the kiddos - they are always delighted to watch the syrup harden to candy right before their eyes!
What you’ll need:
1-2 cups Pure Maple Syrup
Plastic forks, popsicle sticks or chopsticks
A large pot for boiling the syrup
A candy or meat thermometer
Baking sheet or dish
Fresh, clean snow (if there’s no snow where you are, I recommend getting some ice and pulsing it in a food processor or blender until it’s powdery).
To do:
Pack your snow into a shallow baking dish, sheet or even a bowl will do.
Pour 1-2 cups of maple syrup in a pot. Preferably one with high sides, because the syrup will grow as it boils. Bring it to a boil until it is 235°.
*If you don’t have a thermometer, you can test it by dropping a bit of the syrup into a glass of cold water. If it balls up, it’s ready.*
Drizzle the hot syrup over the packed snow. Straight lines of it will do well to be twirled up but feel free to get creative and make swirls and the like.
Use a popsicle stick or plastic fork to twirl it up or grab it with fingers that don’t mind getting sticky and enjoy!
