Sugar Cookie Snack Mix

This one is bound to be a crowd pleaser with children and adults alike. Let the kiddos load it up with sprinkles or make it more “grown-up” by adding some almonds and dried fruit. Enjoy this sweet treat while cozied up around the fire with family and friends!


 

What you’ll need:

  • 3 cups Rice Chex cereal 

  • 1/4 cup butter

  • 1/3 cup granulated sugar

  • 1 teaspoons pure vanilla

  • 1/2 cup powdered sugar

  • 1 cup of white chocolate chips

  • Holiday-colored nonpareils and/or sprinkles

  • Optional add-ins such as dried cranberries or slivered almonds

 
 

To do:

  1. Line a large rimmed cookie sheet with waxed paper. 

  2. Place cereal in a large bowl. 

  3. In a separate small microwavable bowl, microwave butter for 30 seconds until melted. Stir in granulated sugar until dissolved followed by the vanilla. 

  4. Pour this mixture over the cereal, stirring until evenly coated.

  5. Microwave uncovered on High 3 to 4 minutes, stirring after every minute, until thoroughly glazed. Add powdered sugar to the bowl, mixing well to coat cereal. *Here’s where you can add in the extras goodies if you want!*

  6. Spread mixture on the cookie sheet.

  7. In a small microwavable bowl, microwave white chocolate chips for 2-3 minutes, stirring every minute, until melted and smooth. 

  8. Drizzle with a spoon over the snack mix and immediately top with sprinkles.

  9. Refrigerate 20 - 30 minutes or until drizzle is set. Carefully break into bite-size pieces; transfer to a large serving bowl or stage container.
