St. Patty’s Day Cookies

How fun is this green color plus it’s natural without food coloring?? No food coloring needed because the chlorophyll in sunflower seeds reacts with baking soda when baked, causing the green color once cookies have cooled. What a fun science lesson for baking with the kiddos!

You Need: 

  • 1 cup Sunbutter (sunflower butter)

  • 1/2 cup maple syrup

  • 1 egg

  • 6 tbsp coconut flour

  • 1 tsp baking soda

  • Optional: chocolate chips to top with

To Make:

  1. Mix together the wet ingredients: sunbutter, maple syrup, and egg.  

  2. Add the dry ingredients: coconut flour and the baking soda.

  3. Refrigerate the dough anywhere from 30 minutes to overnight. 

  4. When ready to bake, pre-heat the oven to 350 degrees.

  5. Scoop out the dough into small balls. Press each ball down with a fork like a traditional peanut butter cookie. Sprinkle with chocolate chips if desired. 

  6. Bake for about 8-10 minutes. Let the cookie cool completely.  This allows the cookie to turn green on the inside.
